Fructose and mannose metabolism metabolizes dietary fructose through fructolysis — primarily in the liver where fructokinase converts fructose to fructose-1-phosphate, which aldolase B cleaves into triose phosphates that enter glycolysis. Mannose is phosphorylated and converted via mannose-6-phosphate to fructose-6-phosphate.
